Alu matar ki sabzi
a simple recipe for Alu Matar ki Sabzi:
Ingredients:
- 2 cups of chopped potatoes (alu)
- 1 cup of green peas (matar)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit (adjust to your spice preference)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder (adjust to your spice preference)
- Salt to taste
- 2 tablespoons cooking oil
- Fresh coriander leaves for garnish
Instructions:
1. Heat oil in a pan or kadai. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until they turn translucent.
3. Add minced garlic and grated ginger, and sauté for another minute.
4. Add chopped tomatoes, green chilies, and cook until the tomatoes become soft and the oil starts to separate.
5. Add turmeric, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
6. Add the chopped potatoes and green peas. Mix them with the spices and sauté for a few minutes.
7. Add about 1/2 cup of water, cover the pan, and let it simmer until the potatoes and peas are cooked. Stir occasionally to avoid sticking to the bottom.
8. Once the vegetables are tender and the masala is well coated, turn off the heat.
9. Garnish with fresh coriander leaves.
Your Alu Matar ki Sabzi is ready to be served. Enjoy it with roti, naan, or rice!
