Hyderabadi Chicken Biryani  recipe in Urdu:



**Ingredients:**


- 1/2 kg chicken, pieces

- 2 cups basmati rice

- 3-4 onions, thinly sliced

- 2 tomatoes, chopped

- 1/2 cup yogurt

- 2-3 green chilies, slit

- 1/4 cup mint leaves

- 1/4 cup coriander leaves

- 1/4 cup cooking oil

- 2-3 tablespoons ghee

- 1 teaspoon ginger-garlic paste

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon biryani masala

- 1 teaspoon garam masala

- 1 bay leaf

- 4-5 whole cloves

- 4-5 whole green cardamom

- 2-3-inch cinnamon stick

- Salt to taste

- Water for cooking rice


**Instructions:**


1. Start by marinating the chicken. In a bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Add chicken pieces to this mixture and let it marinate for at least 30 minutes.


2. Wash the basmati rice thoroughly and soak it in water for about 30 minutes.


3. In a large pot, bring water to a boil. Add the soaked rice and cook it until it's 70-80% cooked. Drain and set aside.


4. In a separate large, heavy-bottomed pan, heat oil and ghee. Add the whole spices (bay leaf, cloves, cardamom, and cinnamon), and let them sizzle for a moment.


5. Add the sliced onions and sauté them until they turn golden brown. Remove a portion for garnishing.


6. Add the marinated chicken and cook until it changes color and is partially cooked.


7. Add chopped tomatoes and cook until they become soft.


8. Sprinkle biryani masala, garam masala, green chilies, mint leaves, and coriander leaves. Stir well.


9. Layer the partially cooked rice over the chicken mixture. Sprinkle saffron-infused milk on the rice for color and aroma.


10. Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes. You can also place a heavy object on the lid to create a seal (dum cooking).


11. Once done, gently mix the rice and chicken. Garnish with fried onions.
