Ingredients:
For the Cake:
1. 1.5 cups all-purpose flour
2. 1 cup plain yogurt (curd)
3. 1/2 cup granulated sugar
4. 1/4 cup vegetable oil
5. 1/4 cup milk
6. 1 tsp baking powder
7. 1/2 tsp baking soda
8. 1/2 tsp cardamom powder
9. A pinch of saffron strands soaked in 2 tbsp warm milk (for color and flavor)
10. 1 tsp rose water
For the Rasmalai Topping:
1. 8-10 pieces of store-bought rasmalai
2. 1/2 cup milk
3. 1/4 cup condensed milk (adjust to taste)
4. A pinch of cardamom powder
5. Sliced pistachios and almonds for garnish
Instructions:
For the Cake:
1. Preheat your oven to 180°C (350°F) and grease and line a cake pan.
2. In a mixing bowl, whisk together yogurt, sugar, vegetable oil, and milk until well combined.
3. In another bowl, sift together the all-purpose flour, baking powder, baking soda, and cardamom powder.
4. Gradually add the dry ingredients to the wet mixture and fold until you get a smooth batter. Do not overmix.
5. Add the saffron-infused milk and rose water to the batter and fold gently.
6. Pour the batter into the prepared cake pan and tap it to remove air bubbles.
7. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
8. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
For the Rasmalai Topping:
1. Squeeze out the excess milk from the store-bought rasmalai.
2. In a saucepan, heat 1/2 cup of milk and condensed milk. Add cardamom powder and let it simmer until the mixture thickens slightly.
3. Let the milk mixture cool to room temperature.
Assembly:
1. Place the cooled cake on a serving platter.
2. Pour the prepared milk mixture over the cake, allowing it to soak in.
3. Arrange the rasmalai pieces on top of the cake.
4. Garnish with sliced pistachios and almonds.
5. Refrigerate for a few hours to allow the flavors to meld.
