- Slowly add water while continuously stirring to form a smooth batter.
- Pour the batter into a non-stick pan or a greased tray.
2. Steam the Noodles:
- Place the pan or tray in a steamer and steam the batter for approximately 20-30 minutes until it solidifies.
3. Cut the Noodles:
- Once the noodle layer has cooled down, cut it into small squares or rectangular pieces. These are your mung bean noodles.
4. Prepare the Laphing Sauce:
- In another bowl, combine soy sauce, chili oil, toasted sesame oil, black vinegar, sugar, minced garlic, minced ginger, Sichuan peppercorn powder, and a pinch of salt.
- Mix these ingredients well to create a flavorful sauce.
5. Assemble the Laphing:
- Arrange the mung bean noodles on a serving plate.
- Pour the laphing sauce generously over the noodles.
6. Garnish:
- Sprinkle chopped green onions, cilantro, and sesame seeds on top of the laphing.
7. Serve:
- Serve your homemade street-style laphing chilled and enjoy the complex flavors and spicy kick.
Tips and Variations:
- Adjust the chili oil and Sichuan peppercorn powder to control the spiciness of your laphing.
- You can add other toppings like cucumber, bean sprouts, or even crispy fried garlic for additional texture and flavor.
- If you prefer a vegetarian version, ensure that the soy sauce you use is vegetarian.
